About Susan Martin

We are Susan Martin and Adrian Hussey, Canadian owners of La Serre. We live in Toronto, Canada with 2 children in university and a miniature poodle. We both work but spend as much time as possible visiting our vacation property in France. We love to travel, enjoy fine dining, wine tasting and immersing ourselves in the local French culture. We also enjoy trips to Spain which is only an hour away! Adrian explores the region via mountain bike and we both like to hike and swim in the local rivers.

Susan Martin purchased this studio in 2006

Why Susan Martin chose Paziols

We fell in love with this part of France as it is stunningly beautiful, off the typical tourist radar and has lots to see and do. It is also a prime grape growing region, home to many small vintners who make really good, reasonably priced wine. The people in our small town of Paziols are very friendly and welcoming. The area is quiet and peaceful. We like to be physically active and there is lots of hiking, cycling, swimming in the local rivers and lovely Mediterranean beaches. It is a great part of the world for bird watching. For excitement, it is only an hour's drive away to Spain, 1 hour to Figureres, 1.5 hours to Girona, 2.5 hours to Barcelona. Toulouse is 2 hours drive, Montpellier 1.5 hours, Narbonne and Carcassone one hour's drive and Perpignan 45 minutes drive. We also love the excellent, award winning local wines and superb restaurants and food!

What makes this studio unique

The village of Paziols is a rustic, charming, hillside village which encourages a laid-back lifestyle and boasts plenty of sunshine in which visitors can enjoy the stunning surroundings and cool off in the local swimming hole. The village is well placed for exploring the beautiful beaches of the Mediterranean, taking a day trip to Spain, hiking, or discovering the fascinating history of the Cathars. Superb local restaurants explore fresh regional cuisine to accompany the region's award-winning wines.

Nice little place in great walking country

  • 4 of 5

We stayed at the L'Ecurie, which is basically a ground floor/basement flat. Although as such it was fairly dark, the place has been comfortable and had a nice small courtyard which receives sun until about 3pm. For the price it is a great little place and we are happy to recommend it.

A fabulous vacation property

  • 5 of 5

We spent two wonderful weeks at Le Sommet. The house is very comfortable and well equipped. It has some upgrades but maintains many original features like stone walls and timber beams. The house has a fabulous upper balcony that overlooks the rooftops of the town below. After spending the day biking, hiking, or exploring neighbouring towns it was a pleasure to sit on the balcony sipping wine and watching the setting sun light up the surrounding hills.

Despite some fabulous local restaurants, most nights we stayed in and cooked dinner. The shop in the centre of town is a 5 minute walk and carries most anything you need; fresh baguettes and croissants for breakfast and duck and local vegetables for dinner.

Le Sommet provided a quiet and restful environment; the bed was wonderfully comfortable and I haven’t slept as well in ages. We definitely want to come back to your beautiful home and enjoy the experience of life in a small French village.

Lovely Home in a Spectacular Setting

  • 5 of 5

I recommend La Serre completely and without reservation. Paziols provides a true immersion into French country life, and the house offers a fantastic base from which to explore a remarkable part of the world that joins French, Spanish, and Catalan cultures. The apartment (one of three in the house) offers all you need, and the photos on VRBO give an excellent representation of what you'll find. It's fully contained and outfitted, and the owners provide all the information you'll need to take full advantage of your stay. Before this experience, I'd never rented directly from an owner and I was a bit hesitant, but the owners of La Serre made it a positive experience. Don't hesitate to take advantage of all that La Serre and Paziols have to offer.

This studio is exactly what we, two older women, wanted: a nice place to stay in a small village in the south of France with a garden to eat outside, a village café place to go and be greeted with a "bonjour mesdames" with the accent. We loved it! Well equipped kitchen, super beds, a bottle of wine on the table upon arrival, neighbours that each morning greeted us and a nice housekeeper always there to answer our needs . We loved to buy the saucisson and the boudin noir done by traveling butcher in his truck once a week... I am hoping to go back one day because the village of Paziol is so charming, and the studio was great to come back each night since we did 2000 km all over the area, from Narbonne to Carcassonne to Perpignan in a rented car from Perpignan airport. Mirepoix village was our "coup de coeur" and so was our gastronomic dinner at the Abbaye de Camon between Mirepoix and Paziol. We swam in the river when tired of driving, we walked around the village, we visited the local vignoble in Tuchan and tasted lots of wine and we had wonderful days at the beach nearby.

The description is exactly what you get, a warm and comfortable little gem for a few weeks to visit the Languedoc Roussillon, l'Aude and l'Ariège as we did; driving is just so easy, well marked and we never got lost.

Walking, Hiking, and Mountain Biking

In the valley, the walking is gentle. Once you get out of the valley there are more challenging walks, hikes, and mountain biking trails in the surrounding foothills, or for extreme activities you can visit the Pyrenees Mountains, that are located about an hour drive from Paziols.

The great medieval castles are a spectacular feature of the region. The Albigensian crusade against the Cathar heresy occurred in this region in the 13th century - a brutal and dramatic history which comes vividly to life among the castle ruins. The extraordinary walled city of Carcassonne, one of the most dramatic medieval sites of Europe, is only an hours drive away.

For the bird watcher and naturalist, the area has a wide variety of Mediterranean flowers, birds (flamingoes and egrets on the Etangs) and animals, including wild boar.

Within walking distance of La Serre, our local river, the Verdouble provides a beautiful and safe place for swimming and sunbathing.

As well, the Mediterranean is only 45 minutes drive away and it is littered with miles of sandy beaches. And, the Etangs, inland salt water lakes, are ideal for wind-surfing and sailing.

The region has many award-winning wines. In Paziols, we recommend Domaine Bertrand Bergé.

In Tuchan:

Château de Nouvelles - lovely Château with excellent wines.

Domaine de Rolland and Chateau Wialu.

Cucugnan - Chateau Trillol.

This is just a small sample. There are many more wonderful local wines for you to check out.

There are many provincial style restaurants offering famous local French country cooking. Below is a list of our favorite restaurants, all within a 5-20 minute walk or drive of L'Ecurie.

We strongly suggest you make reservations at any of the restaurants before you head out.

Le Reve d’Angele - Five minutes walk from L'Ecurie in the centre of Paziols, this lovely, small restaurant offers traditional, local cuisine and wines at very affordable prices. Dishes such as a seafood platter, fresh fish, brochettes and assorted meat are prepared from the freshest local ingredients and the ‘set’ menus are very good value for money.

Auberge du Vieux Puits -Fontjoncouse - 3 Michelin star restaurant 30 minute drive from Paziols.

Le Petit-Gris -Tautavel - Route d’Estagel - 04 68 29 42 42

In a quiet setting just 10 minutes drive from Paziols and outside the town of Tautavel, this charming and friendly restaurant offers local cuisine in a pleasant and comfortable atmosphere. The large windows offer scenic views of the vineyards and the Pyrenees. Specialties include rabbit or snails grilled over a wood fire, grilled sweet peppers and eggplant, various fish dishes, chocolate and honey tart and other Catalan specialties.

Auberge du Vigneron - Cucugan -

In the town of Cucugan, 13 km drive from Paziols, this former wine making building has been converted into a rustic restaurant. With stone walls, oak casks and wine making equipment for ambiance, this auberge serves authentic cuisine of the land at reasonable prices. Menu items include tomato tart with basil, quail, foie gras and fried red mullet.

L’Auberge du Cellier - Montner - 1 Michelin star- Approximately 18 km from Paziols, this restaurant is one of our favourites. Situated in a pretty village the innovative menu presents foie gras in 3 ways, typical food in a creative way. The knowledgeable staff can provide advice on wines to complement your meal.

Le Pichenouille - Maury - Unassuming, comfortable, cosy restaurant with authentic local cuisine, good value for the money and over 200 local wines.
